Yoghurt and Caramelized Onion Whole Wheat Pasta

A quick and easy dish, can be served as a warm hearty meal or a side summer salad


500g Whole wheat Fusilli Pasta

250g ULTRA FOOD INNOVATIONS Full Cream Thick Yoghurt

1 Onion

1 Tbs Butter

Cheese to top

Chives to top

Salt and pepper to taste


Heat the butter in a pan over medium-high heat and add the onions. Reduce the heat to medium low and cook, stirring frequently and seasoning with salt to taste as you go, until the onions are soft and golden brown, 20 to 30 minutes.

Meanwhile, fill a large pot with water and bring to a boil. As the water heats, add enough salt so that you can taste it. Add the pasta and cook until soft

Combine the yoghurt with 1/4 cup water and mix well. Drain the pasta and toss with the yoghurt mixture

Serve the pasta sprinkled with cheese and topped with caramelised onions and their juices topped with chives and salt and pepper to taste

This pasta dish can also be served cold as a salad on hot summer days
