Raspberry and Feta Summer Salad

This salad adds a refreshing spin to a summers day meal

It's quick, it's easy, and it pops with colour.


Ingredients - Salad

1 carton of raspberries, washed

250g of ULTRA FOOD INNOVATIONS Feta Cheese cut into squares

3 sprigs spring onion, chopped

Chives

1 bag Crisp Lettuce

Handful of Rocket

Handful of Red Cabbage for extra colour


Ingredients - Balsamic Vinaigrette:

4 tbsp olive oil

4 tsp balsamic vinegar

dash each of salt, pepper

1/2 tsp Soy Sauce


Instructions

Add lettuce mix to large bowl, add the chopped spring onion and chives.

Top with raspberries and add cubed feta over the top.

Mix olive oil, balsamic vinegar, salt, pepper and soy sauce and then pour over top immediately before serving.
